Black Bean Chicken Chow Fun

Chinese Restaurant Chow Fun is a favorite on our menu. Try them all... Chicken, Shrimp, Beef or Combination Black Bean Chow Fun! You can even ask Chef Eric to prepare the recipe shown below (an "off the menu" variation!)

Black Bean Chicken Chow Fun

8 oz Chow fun noodles
4 oz chicken breast or thigh cut in strips
1 tbl minced garlic
2 Tbl light olive oil
1 oz green onion cut in strips
1 oz bell pepper cut in strips
1 tbl Black Soy sauce
1 tbl black bean oyster paste
1 tbl Hoisin sauce
1 tsp chicken base
¼ cup chicken broth
cilantro

On high heat in a wok or cast iron pan heat 1 tbl oil and add Chow Fun Noodles.
Heat through about 3 minutes then remove and set aside.
Add 1 tbl oil and sauté chicken, add garlic till cooked through, add green onion and bell peppers to chicken and toss.
Add soy sauce, black bean paste, chicken base, hoisin sauce and toss to incorporate all ingredients.
Add chicken broth and potato starch until it forms a gravy-like consistency.
Add Chow Fun Noodles and toss.
Garnish with a couple of sprigs of ciliantro and serve immediately
